Part 1: Fun Pancake Mix-Ins
Fold these gently into the batter right after you finish mixing the wet and dry ingredients (just before letting it rest).
-
Blueberry Lemon:
-
Add 1 cup of fresh blueberries (tossed in a spoonful of flour so they don’t sink to the bottom) and 1 teaspoon of fresh lemon zest to the batter.
-
-
Classic Chocolate Chip:
-
Fold in ½ cup of semi-sweet chocolate chips. (Pro-tip: Drop a few extra chips on top of each pancake right after pouring the batter onto the griddle!)
-
-
Pecan Praline:
-
Add ½ cup of finely chopped pecans and a dash of cinnamon to the batter.
-
Part 2: Easy Homemade Cinnamon Maple Syrup
Whip this up in 5 minutes while your pancakes are cooking for an upgrade from store-bought syrup!
Ingredients:
-
1 cup pure maple syrup (make sure it’s real maple syrup for the best flavor)
-
2 tablespoons unsalted butter
-
½ teaspoon cinnamon
-
½ teaspoon vanilla extract
-
A tiny pinch of salt
Instructions:
-
Combine the maple syrup, butter, cinnamon, and salt in a small saucepan over medium-low heat.
-
Cook, stirring occasionally, until the butter is completely melted and the syrup is warm and bubbling gently (about 2–3 minutes).
-
Remove from heat and stir in the vanilla extract.
-
Pour warm over your fresh pancakes!
