GARLIC AND BUTTER FLATBREAD.

Garlic and butter flatbread is a quick, yeast-free flatbread that cooks in minutes on a hot skillet. It yields a soft, chewy texture with crispy golden spots, brushed generously with melted garlic herb butter.

Ingredients

For the Flatbread:
  • 2 cups all-purpose flour (plus extra for dusting)
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 3/4 cup plain yogurt (Greek yogurt or regular whole-milk yogurt)
  • 1/4 to 1/3 cup warm water (adjust as needed to form a soft dough)
For the Garlic Butter Brush:
  • 4 tbsp unsalted butter, melted
  • 2 to 3 cloves garlic, finely minced
  • 2 tbsp fresh parsley or cilantro, finely chopped
  • A pinch of salt
1.Mix the Dough:

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Stir in the yogurt and warm water. Mix with a spoon or your hands until a shaggy dough forms.
2.Knead Until Smooth:

Turn the dough out onto a lightly floured surface. Knead for 2 to 3 minutes until it becomes smooth and pliable. If it feels too sticky, sprinkle a tiny bit more flour; if too dry, wet your hands slightly while kneading. Cover with a damp towel and let rest for 15 minutes.
3.Divide and Roll:

Divide the rested dough into 6 equal pieces. Roll each piece into a ball, then use a rolling pin on a floured surface to roll them out into flat rounds or ovals about 1/4-inch thick.
4.Prepare the Garlic Butter:

While the dough rests, melt the butter in a small bowl. Stir in the minced garlic, chopped herbs, and a pinch of salt. Set aside.
5.Cook on a Hot Skillet:

Heat a cast-iron skillet or non-stick pan over medium-high heat until very hot (do not add oil to the pan). Place one rolled flatbread onto the dry skillet. Cook for 1 to 2 minutes until large bubbles form on the surface and the underside has golden-brown spots. Flip and cook for another 1 minute on the other side.
6.Brush and Serve:

Transfer the cooked flatbread to a plate and immediately brush the top generously with the warm garlic herb butter. Repeat with the remaining pieces and serve warm.
