Fork-tender foil packet pork chops are an easy, mess-free dinner where thick-cut chops bake in foil with potatoes, vegetables, and a rich garlic-butter sauce, trapping steam to ensure the meat stays incredibly juicy and melt-in-your-mouth tender.
Ingredients
For the Pork Chops & Vegetables:
-
4 bone-in or thick-cut boneless pork chops (about 1 inch thick)
-
1 lb baby potatoes, halved or quartered
-
2 cups fresh green beans, trimmed (or broccoli florets)
-
2 tbsp olive oil
-
Salt and freshly cracked black pepper, to taste
For the Garlic-Herb Butter Sauce:
-
4 tbsp unsalted butter, melted
-
3 cloves garlic, minced
-
1 tsp dried Italian seasoning (or a mix of dried thyme, oregano, and rosemary)
-
1 tsp Dijon mustard
-
1/2 tsp paprika
1.Preheat and Prep Foil Sheets:
Preheat your oven to 400 F (200 C). Cut four large sheets of heavy-duty aluminum foil (about 12×18 inches each), laying them out flat on a counter.
2.Arrange Veggies and Potatoes:
Toss the halved baby potatoes and trimmed green beans in a bowl with 2 tbsp of olive oil, salt, and pepper. Divide the vegetable mixture evenly into the center of each foil sheet.
3.Season the Pork Chops:
Pat the pork chops dry with paper towels, then season both sides generously with salt, pepper, and a pinch of paprika. Place one seasoned pork chop on top of the vegetables in each foil packet.
4.Mix and Pour Garlic Butter:
In a small bowl, whisk together the melted butter, minced garlic, Italian seasoning, and Dijon mustard. Spoon or brush the garlic herb mixture evenly over each pork chop and the surrounding vegetables.
5.Seal the Packets:
Bring the long edges of the foil up over the food and fold them together to create a sealed top, then crimp the short ends tightly to trap the steam inside while leaving a little room for air circulation.
6.Bake and Rest:
Place the foil packets on a baking sheet and bake in the preheated oven for 25 to 35 minutes (depending on the thickness of the chops), or until the internal temperature of the pork reaches 145 F (63 C) and the potatoes are fork-tender. Carefully open the packets, let rest for 5 minutes, and serve.
