Slow-Roasted & Smoked Beef Ribs
Tender, juicy, and intensely beefy, these beef ribs feature a rich, peppery bark on the outside and meat so tender it pulls right off the bone. Whether you’re using an oven, smoker, or slow cooker, this method yields mouthwatering results.
Ingredients
-
1 rack beef back ribs or beef plate short ribs (about 3 to 4 lbs)
-
1 tbsp yellow mustard or olive oil (as a binder for the rub)
-
1/4 cup beef dry rub (see recipe below, or your favorite store-bought beef rub)
-
1/2 cup beef broth, apple juice, or dark beer (for wrapping/moisture)
-
1 cup your favorite BBQ sauce (optional, for glazing)
Simple Homemade Beef Dry Rub
-
2 tbsp coarse kosher salt
-
2 tbsp coarse black pepper (freshly cracked is best)
-
1 tbsp garlic powder
-
1 tbsp smoked paprika
-
1 tsp onion powder
-
1 tsp brown sugar (optional, helps with caramelization)
Instructions
1. Prep the Ribs
-
Remove the thin, papery membrane (silverskin) from the back of the rib rack using a knife corner and a paper towel to grip and pull it off. (This allows smoke and flavor to penetrate the meat better.)
-
Pat the ribs completely dry with paper towels.
2. Apply the Binder and Rub
-
Rub a thin layer of mustard or olive oil all over both sides of the ribs. (Don’t worry, the flavor cooks out and won’t taste like mustard!)
-
Season generously on all sides with the beef dry rub, patting the spices gently into the meat.
3. Choose Your Cooking Method
-
Oven-Roasted Method (Great for indoors):
-
Preheat your oven to 275°F (135°C).
-
Place the ribs meat-side up on a baking sheet lined with heavy-duty aluminum foil.
-
Pour the beef broth around the ribs, then wrap the foil tightly around them to create a sealed packet.
-
Bake for 2.5 to 3 hours until the meat begins to shrink back from the ends of the bones.
-
Open the foil, brush with BBQ sauce if desired, and turn the oven to Broil for 3 to 5 minutes to caramelize the crust.
-
-
Smoker Method (For authentic BBQ flavor):
-
Preheat your smoker to 275°F (135°C) using oak, hickory, or pecan wood.
-
Place the ribs directly on the smoker grates, meat-side up. Smoke for about 3 hours, spraying with apple juice or beef broth every hour to keep them moist.
-
Wrap the ribs tightly in butcher paper or aluminum foil (the “crutch”) with a splash of broth, and cook for another 1.5 to 2 hours until tender (internal temperature should reach around 200°F–203°F).
-
Unwrap, optionally glaze with BBQ sauce, and let cook uncovered for 15 minutes to set the bark.
-
4. Rest and Slice
-
Remove the ribs from the heat and tent loosely with foil.
-
Let rest for 15 to 20 minutes before slicing between the bones. This locks in the juices so they don’t dry out.
Serving Suggestions
-
Classic Sides: Serve alongside creamy coleslaw, baked beans, cornbread, or macaroni and cheese.
-
Sauce on the Side: Offer extra warm BBQ sauce or pickled red onions to cut through the rich, savory beef flavor.
Chef’s Tip: Beef ribs have a lot of natural fat (especially short ribs), which is what makes them so juicy. Don’t rush the cook time—low and slow allows that fat to render completely, resulting in butter-soft meat!
