Low-Carb Ham & Cheese Bakes (Muffin Tin Style)
If you love the savory, comforting flavors of a ham and cheese pastry but want to keep things keto-friendly, high-protein, and very low in carbs, these easy ham and cheese bakes are a game-changer. They come together in a standard muffin tin, making them perfect for meal prep, a quick breakfast, or a savory snack.
Ingredients
-
Deli ham or cooked ham: 8–12 slices (used to line the muffin cups like little cups or crusts)
-
Eggs: 4 large eggs
-
Heavy cream or whole milk: 2 tablespoons
-
Shredded cheese: 1 cup (cheddar, Swiss, or Gruyère work wonderfully)
-
Green onions or chives: 2 tablespoons, finely chopped
-
Dijon mustard: 1 teaspoon (optional, for a kick of flavor)
-
Salt and black pepper: To taste
-
Garlic powder: 1/2 teaspoon
Step-by-Step Instructions
Step 1: Prep the Oven and Muffin Tin
-
Preheat your oven to 375°F (190°C).
-
Generously grease a 6-cup muffin tin with non-stick cooking spray or butter to prevent sticking.
Step 2: Create the Ham Cups
-
Line each of the 6 muffin cups with 1 to 2 slices of ham, overlapping them to form a little basket or cup that presses up against the sides and bottom of the tin.
Step 3: Mix the Filling
-
In a medium mixing bowl, whisk together the eggs, heavy cream, Dijon mustard, salt, pepper, and garlic powder until smooth.
-
Stir in about half of the shredded cheese and the chopped green onions directly into the egg mixture.
Step 4: Pour and Top
-
Carefully divide the egg and cheese mixture among the ham cups, filling them about 3/4 full.
-
Sprinkle the remaining shredded cheese over the top of each cup.
Step 5: Bake
-
Bake in the preheated oven for 15 to 18 minutes, or until the eggs are completely set in the center and the cheese on top is melted, bubbling, and lightly golden.
-
Let them cool in the pan for about 5 minutes, then run a butter knife gently around the edges to pop them out.
Storage Tip: These store wonderfully in an airtight container in the refrigerator for up to 4 days. Just pop one in the microwave for 30–45 seconds for a warm, low-carb breakfast on the go!
