Chocolate-Dipped Peanut Butter Balls

Here is a classic, irresistible recipe for Chocolate-Dipped Peanut Butter Balls (often called Buckeyes!). They feature a sweet, creamy peanut butter center coated in a smooth shell of rich chocolate.

Ingredients

  • The Peanut Butter Filling:
    • 1 cup creamy peanut butter (regular commercial peanut butter like Jif or Skippy works best here compared to natural, oily peanut butter)
    • ½ cup (1 stick) unsalted butter, softened to room temperature
    • 2 to 2 ½ cups powdered sugar
    • 1 teaspoon vanilla extract
    • ¼ teaspoon salt (if your peanut butter is salted, you can skip this)
  • The Chocolate Coating:
    • 1 ½ cups semi-sweet or milk chocolate chips (or chocolate baking wafers)
    • 2 tablespoons coconut oil or paraffin wax/shortening (helps thin out the chocolate for smooth dipping)
  • Optional Garnish:
    • Flaky sea salt, rainbow sprinkles, or a tiny drizzle of white chocolate on top

Instructions

1. Mix the Peanut Butter Base

  • In a large mixing bowl, beat the creamy peanut butter and softened butter together until smooth and well combined.
  • Add the vanilla extract and mix again.
  • Gradually add the powdered sugar, one cup at a time, mixing on low speed. The mixture will become thick, crumbly, and dough-like. (If it feels too wet to roll, add a couple of extra tablespoons of powdered sugar).

2. Roll into Balls

  • Scoop out tablespoon-sized portions of the peanut butter dough and roll them firmly between your palms to form smooth balls (about 1 inch in diameter).
  • Place the balls onto a baking sheet lined with parchment paper.

3. Chill the Centers

  • Place the baking sheet of peanut butter balls into the freezer for 20 to 30 minutes (or the refrigerator for 45 minutes) until they are firm. Note: Chilling them is crucial so they don’t melt or fall apart when dipped in warm chocolate!

4. Melt the Chocolate

  • While the balls are chilling, combine the chocolate chips and coconut oil (or shortening) in a microwave-safe bowl.
  • Microwave in 30-second increments, stirring thoroughly after each, until completely melted and smooth.

5. Dip and Coat

  • Remove the chilled peanut butter balls from the freezer.
  • Using a toothpick inserted into the top of a ball (or a small dipping fork/spoon), submerge each ball into the melted chocolate, leaving a small circle at the top uncovered if you want the classic “Buckeye” look, or cover them completely for a fully chocolate-dipped treat!
  • Let any excess chocolate drip off back into the bowl, then place the dipped ball back onto the parchment paper.

6. Set and Store

  • If you want to add flaky sea salt or sprinkles, add them immediately before the chocolate sets.
  • Return the finished candy to the refrigerator for 15 to 20 minutes to let the chocolate shell harden completely.

Storage

Store your chocolate-dipped peanut butter balls in an airtight container in the refrigerator for up to 2 weeks, or freeze them for up to 2 months!
Are you making these for a holiday cookie tray, a party, or just as a sweet treat to keep in the fridge?
